Chongqing noodles were formerly called cut noodles切面, also called “barbed noodles杠子面”. It is a comprehensive feature of “pressed noodles压面” and “cut noodles切面” developed from the three traditional techniques of “pressing压”, “pulling拉” and “cutting切” of Chinese handmade noodles.
