Buddha Jumps Over the Wall佛跳墙, also known as Fu Shouquan福寿全, is a famous dish in Fuzhou, Fujian Province, belonging to the Fujian cuisine department.

In 2002, “Buddha jumping over the wall” won the Chinese famous banquet中华名宴 in the 12th National Cooking Festival第十二届全国厨艺节. In February 2022, it was selected into the National Landmark Food List国家地标美食名录.

According to legend, this dish was developed by Zheng Chunfa郑春发, the owner of Juchunyuan restaurant聚春园菜馆 in Fuzhou during the Daoguang道光 period of the Qing Dynasty. According to Mr. Fei Xiaotong费孝通, the inventor of this dish is a group of beggars. These beggars carry broken earthen pots and beg everywhere every day, gathering all kinds of leftovers in the restaurant.

One day, a restaurant owner went out and accidentally smelled a wisp of strange fragrance on the street. Looking for the fragrance, he found the leftover wine and all kinds of leftovers in the broken crock. Therefore, the boss was inspired and went back to the store to boil all kinds of raw materials in one pot with wine, creating Buddha jumping over the wall.

Buddha Jumps Over the Wall is usually made of abalone, sea cucumber, fish lip, yak skin glue, apricot abalone mushroom, hoof tendon, flower mushroom, cuttlefish, yaozhu瑶柱 and quail egg, which are added with soup-stock and Fujian old wine and simmered over a slow fire. The soup-stock of Buddha jumping over the wall is made of pig leg bones, chicken bones and duck bones after 10 hours of alternating large and small fires. After the soup is made, it should be simmered with the fried meat for 4-5 hours. And this process must be sealed with lotus leaves in order to keep the aroma intact in the soup pot.

Buddha jumping over the wall has almost no fragrance in the process of simmering. On the contrary, when the lid is opened, it only needs to be lifted slightly, and there is a smell of wine, which gladdens the heart and refreshes the mind. The soup is thick and mellow, but thick but not greasy. When enjoying, the aroma of wine is mixed with various fragrances. The fragrance floats in four places, rotten but not rotten, and has an endless aftertaste.

And It takes 3 days to soak it in cold water, then soak it in 80 ℃ hot water for 2 days, and then simmer it separately for 3 days. Ingredients:

  • 6 Dried abalone (or fresh Pearl Abalone)
  • One piece of flower glue
  • 6 dried sea cucumbers
  • A pot of chicken soup
  • A piece of duck breast (or duck leg)
  • 100g ham meat
  • 5 soaked dried mushrooms
  • 6 grass shrimp (or river shrimp)
  • 10 clams
  • A pig’s paw
  • 10 pigeon eggs (or quail eggs)
  • A winter bamboo shoot
  • A handful of scallops (or scallops)
  • Right amount of streaky pork

Instruction:

  • Step 1, Blanch the duck legs and pig claws, wash the fresh abalone, soak the hair and dry the sea cucumber.
  • Step 2, Jinhua ham金华火腿 and abalone are steamed, and the streaky pork is boiled with water. The mushrooms, bamboo shoots and pigeon eggs are cooked.
  • Step 3, Fried duck legs and pig feet.
  • Step 4, Add other meat and broth, and finally put mushrooms and bamboo shoots.
  • Step 5, Stew in casserole for 5 hours.
  • Step 6, When the soup is less, pour it out.
  • Step 7, Place broccoli and pigeon (quail) eggs around.

Tips:

  • Fish belly should be soaked with oil, but when soaking sea cucumber, sea cucumber should not be stained with oil.
