Tianjin-style Jianbing煎饼果子 is a famous snack in Tianjin天津, China. People in Tianjin take it as breakfast. “Fruit果子” is fried food. Fried pancakes with eggs are wrapped with fried dough sticks (called fruit in Tianjin), so it is called “pancake fruit煎饼果子”. The pancake fruit is composed of mung bean flour pancakes, eggs, and fried dough sticks. It is seasoned with sauce, chopped green onion, fermented bean curd, and chili sauce. It tastes salty and fragrant.
Today’s Fried pancakes with eggs’ raw materials are not limited to pancakes made of mung bean flour, but also a variety of choices such as soybean flour, black bean flour, and so on. However, Tianjin people still adhere to the traditional way of eating. The only ingredients used in the authentic pancake fruit are mung bean noodles, fried dough sticks, scallion, and other condiments.

It is said that Zhuge Liang诸葛亮 was often chased by Cao Jun when he first assisted Liu Bei刘备. Once Zhuge Liang and his soldiers were trapped between the Yi River沂河 and the Yao River湅河. Because of the loss of cooking utensils, Zhuge Liang asked his soldiers to make pancakes on the gong.
Later, this method of making pancakes was slowly passed down. Now in most parts of Shandong, people’s staple food is pancakes. Although the pancake originated in Shandong, the pancake fruit originated in Tianjin. There are various legends about this kind of food in Tianjin.
In the Ming Dynasty明朝, there were many businessmen from all over Tianjin. Some businessmen from Shandong brought pancakes, which promoted the production of pancake fruits in Tianjin. Moreover, the pancake fruit in Tianjin has been applied to become an intangible cultural heritage, which is equivalent to determining the authentic status of Tianjin pancake fruit.
How to make Tianjin-style Jianbing?
Ingredients:
- Two eggs
- 150g flour
- 80g cornflour
- An appropriate amount of chives
- An appropriate amount of sweet noodle sauce
- An appropriate amount of sesame paste
- A spoonful of sesame oil
- A little salt
Instruction:
- Step 1, Mix the flour with cornflour, add an appropriate amount of salt and pepper, and mix well.
- Step 2, Add an appropriate amount of water several times and stir it into a paste while adding it. The consistency should be marked by chopsticks.
- Step 3, Add sesame oil into sesame paste and stir well, then add sweet flour paste and a little cold boiled water and stir well.
- Step 4, Wash the shallots and cut them into small pieces.
- Step 5, After heating the pan a little, turn the heat down, apply a thin layer of oil, scoop in a spoonful of batter, turn the pan, smooth the bottom with a shovel and make it as thin as possible.
- Step 6, When the dough surface starts to solidify, add an egg.
- Step 7, Spread the egg with a spoon and cover it on the pancake.
- Step 8, When the egg liquid is about to completely solidify, brush the sauce evenly, sprinkle an appropriate amount of sesame and scallion, and fry until cooked.
- Step 9, Add cooked glutinous rice, and then add seasoning: 2 tablespoons of raw soy sauce, 1 tablespoon of oil consumption, 1 tablespoon of cooking wine, 1 tablespoon of salt, an appropriate amount of five-spice powder, stir fry evenly (you can make it a little salty because it is used for stuffing).
- Step 10, Continue to stir fry for a while and take out the pot for standby.
- Step 11, Put a spoonful of glutinous rice stuffing on the dumpling skin, tighten the mouth, and pinch it into shape at will. And Do a few more like this.
- Step 12, Put cold water in the pot, fire, and steam for 15 minutes.
Tips:
- When frying bread, the batter should not be too thick. If it is too thick, the bread is not easy to dilute and affects the taste.
- If you like spicy flavor, you can also add an appropriate amount of chili powder to the flour, but it is not recommended for breakfast.
- After the pot is hot, turn to low heat, and the pot can’t be too hot, otherwise the batter will be cooked at once and can’t flow.
