Luosifen螺蛳粉 is one of the characteristic snacks in Liuzhou City, Guangxi Zhuang Autonomous Region广西壮族自治区. It has a unique flavor of spicy, refreshing, fresh, sour and hot. Snail powder is a famous snack with the most local characteristics in Liuzhou city.
Many people who have eaten luosifen have questioned what is not a snail in the luosifen. It is said that the spire soup of the snail powder is made from the secret folk recipe of snails, pork bones, medicinal herbs, natural spices and so on. After the soup is passed, the screw meat will be discarded, so the essence is concentrated in the soup.
Luosifen first appeared in the late 1970s. Although it has a short history, the custom of eating snail and rice flour has a long history in Liuzhou. Liu Wen刘文, who has been engaged in cultural relics and Archaeology in Liuzhou for more than 40 years, believes that from a small aspect, the historical and cultural development track of Liuzhou is a history of collecting edible snails.
Liuzhou luosifen has a growing reputation and a large number of diners, but there are different opinions on the real origin of snail powder, but none of these statements can be verified.
One of them said that one night in the early 1980s, several outsiders came to Liuzhou and arrived at a small rice noodle shop that was about to close. Because there was no bone soup, there was only one pot of snail soup left, so the stall owner boiled the rice noodles in the snail soup, plus vegetables, peanuts and other side dishes. Several outsiders shouted delicious after tasting it. Later, the stall owner gradually improved its ingredients and production and made snail powder.
On August 20, 2018, “Liuzhou snail powder” won the National Geographic Indication trademark. In 2008, the craft of Liuzhou snail powder was selected into the second batch of intangible cultural heritage list of Guangxi Zhuang Autonomous Region. In 2020, snail powder was included in the list of national intangible cultural heritage.
How to make Luosifen?
Ingredients:
- The appropriate amount of rice noodles
- The right amount of snail
- A proper amount of fermented bean curd
- A proper amount of sour bamboo shoots
- A proper amount of pickled cabbage
- An appropriate amount of pig spine
- Two slices of lettuce
- A little fried peanuts
- A little dried radish
- A little black fungus
- A little scallion
- A proper amount of salt
- An appropriate amount of monosodium glutamate
- An appropriate amount of rapeseed oil
- Appropriate cooking wine
- The right amount of pickled pepper
- An appropriate amount of chili powder
Instruction:
- Step 1, Cut off the lean meat from the pig bone.
- Step 2, Put the field shell in the clear water for 1 hour to remove the sand and soil, then wash it again.
- Step 3, Cut the material into silk and dice, then pour some fried bean curd bamboo slices into the pot, and then add chili powder into the remaining oil of fried bean curd to make chili oil (note that when making chili oil, the residual temperature after fried bean curd bamboo can be used, and there is no need to add fire).
- Step 4, Put the pig bones into the pot and cook the soup. Add a tablespoon of rice wine into the soup. Put shredded pickled cabbage and diced sour beans into the pot and fry. Add a little oil, but don’t put salt.
- Step 5, Put black fungus and pork in a pot and fry until cooked, and add a little salt.
- Step 6, Put oil in the pot, add garlic rice and ginger slices to saute until fragrant, then stir fry the snail, add a spoonful of salt and half a spoonful of spices for 2 minutes, then add half a bowl of water, boil it and put it into the bone soup.
- Step 7, Cook the soup with snail meat for about 1 hour, and then put the previously prepared chili oil into the pot (if you don’t like spicy food, you can leave it alone).
- Step 8, Then boil half a pot of water, put salt in the water (stir evenly, taste salty). When the water boils, scald the rice flour in the water, then pick it up, add the prepared ingredients, and finally add the snail soup.
